It seems that I can only do 1 quest at a time. Is that the case? At some character level do you have multiple quest options?

1st, they're called missions here.

2nd, welcome to City of Heroes.

3rd, no you can have up to seven but only one at a time from each contact. As the game progresses you can have multiple contacts, all willing to give you missions. Also depending on the side, you can get a police scanner (CoH) or a newspaper (CoV) that are also a source for missions.

Lastly, Paragon Wiki is your friend.

First, welcome to CoX!

Next...terminology for future reference. "Missions" not "quests".

And you should be able to have up to 7 missions at once. Could you explain further? Are you a low level character, like below five? You start off with one contact and later get more (many many more) in a sort of expanding tree format.

EDIT: Gah, fourth already? Geez, we're fast.

There's one exception to the "seven active missions" limit: if you're running a task force, strike force, or trial, that's the only mission you can have active. All your other missions will be put on hold until you finish the TF/SF/trial.

Also, if a contact gives you a hunt mission (Defeat 10 X) enemies of that type defeated in regular missions count towards the hunt total.

Luckily we have no "Go defeat wild boars until you have 20 wild boar heads" missions requiring a specific item to drop from the defeated enemy. (And of course it usually seems that 70% of boars run around without heads.) The "Defeat [number] of [Enemy]" is as close as CoX gets to that, and they're usually avoidable.

Unless it's "defeat [number] of [enemy] in [zone/area/district]" otherwise qualifying critters in the instanced maps would not count, as they are not in the correct location. (even if the mission door is within the specified area)

True. If the hunt is area specific then only mobs in that area count.
So, other than that... And at least every mob of the correct type in the correct area counts. No random roll to see if it was valid.
